Fine Dining at Swissotel Equinox Restaurant

For a top-of-the-world dining experience, Equinox is probably the one of the best restaurant in Singapore to go for. At 220+ metres above ground, the Equinox offers unparalleled views of the Singapore Central Business District (CBD) skyline. All patrons regardless of where they sit in the restaurant benefit from this view due to the full length ceiling-to-floor windows and layered seating arrangement. If you want the best view with a table by the window, it will cost you an additional $20 to reserve this table.

There is even a lounge for customers to wait til their reservation timing at the ground floor and from here, there are private lifts that bring you all the way directly up to the 70th level where Equinox is located.

We tried the 5-course menu degustation with Jonas Lundgren which cost $150+ per person and we enjoyed special promotions as it was just a few more weeks to National Day. A complimentary snack of dried salmon skin with egg yolk (as shown at top right corner of the picture below) was served prior to the main courses We started off with Oyster Cauliflower and “Champagne” which were very fresh and served with sea salt to complement the raw taste of the oysters. The next course – White Asparagus Salad “Herbs from our Organic Garden” Summer Truffles was presented in a very unique manner – the white asparagus was served up in a small cup and drank. The other portions of this dish were served in a very “artistic” way (a spread of herbs around the edge of a big plate). It made the plate look very empty and we wondered if there was more to it but unfortunately no.

This dish was then followed by Turbot with Leek & “Ashes” Spicy Loster Bisque which essentially was a sizeable portion of fish cake served with very savoury lobster soup – the taste of the soup making up more for the plain taste of the turbot (which was very tasteful in itself).

The main course was Braised and Grilled Beef “Short Rib” Morel Mushrooms and for customers with dietary requirements for non-beef dishes, the kitchen readily serves up one of the best lamb ribs dish I have ever tried. Even the beef main course tastes excellent – succulent and juicy beef which tastes like the best of the Japanese Wagyu beef.

The dessert was prepared in a manner that fits in perfectly with the fireworks performance we just saw from the National Day Parade (NDP) rehearsal. Equinox is perhaps the only restaurant where you could dine and at the same time enjoy (during weekends) fireworks performance and the best part is the fireworks are at your eye level (you don’t have to look up – that’s how tall the restaurant is!). Back to the dessert served to round up the delicious 5-course degustation menu – Alpaco Chocolate 66% “Apricot” & “Lemongrass”. It is actually a very yummy chocolate mousse with *surprise surprise* a sparkling effect when you put it in your mouth (pretty much like those “sparkling pop pop” sweets that we had as a child). We were informed that this was specially made to celebrate Singapore’s National Day and an apt reference to the fireworks performance we just witnessed.
